Goan Fish Curry

- 3 tsp coriander seeds
- 1 tsp cumin seeds
- 2-4 red chillies deseeded and finely chopped(depends on how hot you like it)
- 2cm piece of fresh ginger, peeled and grated
- 3-4 garlic cloves finely chopped
- 1 tsp turmeric
- 2 tbsp ghee or cooking oil
- 1 large onion, finely chopped
- 1 large tomato, finely chopped
- 1 x 400ml tin coconut milk
- 1 tbsp brown sugar
- 2 tsp tamarind paste
- 1 green chilli deseeded and finely chopped
- 500g firm white fish fillets cut into chunks
- Small bunch of chopped coriander
METHOD
Heat the ghee or oil in a pan over a medium heat, then add the coriander & cumin seeds and cook briefly until aromatic. Add the onion, ginger, garlic, tumeric, salt and cook until soft and starting to brown a little, then throw in the tomato and cook down.
Add the coconut milk, sugar, tamarind, green & red chilli and bring to a high simmer. Turn down the heat and simmer gently for about five minutes, until the sauce has slightly thickened. Check for seasoning. Add fish to the sauce and simmer gently until the fish is cooked through. Add the coriander and serve with rice.
